English Muffins

Once you have a homemade English muffins you will never want to have a store bought one again. Luckily, English muffins are super easy to make, so this should not present too much of a problem. I have seen many recipes out there for English muffins. The recipe we made was from the ever dependable Chuck from The Knead for Bread. You can find his recipe here, along with a great picture tutorial.

This is the only experience I have had making English muffins, and they came out great. However, I am interested in trying some other recipes as well. My only complaint with Chuck’s recipe is that the muffin lacked the traditional “nooks and crannies” that English muffins are so famous for. Despite that, they tasted authentic and were great with our poached eggs as well as with some fresh peanut butter and currant jelly. (BTW - Geoff recently bought currant jelly over to our house for something and it is by far my new favorite jelly flavor. Yum!) I froze most of these individually wrapped. They froze nicely and I am still snacking on them.

Follow up:

This dough was actually a bit hard to work with at first. I think I may have needed more water than the recipe called for. My initial dough was not as loose as what is shown in the Knead for Bread’s tutorial. It also worth noting that I used half bread flour and half all purpose flour, at Nick’s suggestion.

This recipe also calls for a good 7 minutes of hand kneading, which Nick greatly assisted me with. Besides his manly strength, he is also much more well versed in bread making than I. It is much easier to make bread when you have someone around who knows what they are doing.

This dough did rise very nicely.

And it was also a cinch to roll out.

Here they are frying up in my pan. I lightly burned a few of them. :-/ I also think in this step you can totally omit the cornmeal. All it did for me was burn and make a mess.

This is a terrible picture, but the only one that I had of the insides. As you can see there are some air pockets, but it was not nooky and cranny-e enough for me.

This is funny. You want to make my spaghetti pie and I want to make your English muffins. They look fantastic. I actually have a recipe for an English muffin loaf. I need to get it out and make it. You have so inspired me.

yes, thanks for the inspiration. my father is a baker (www.fatboybakery.com) and he makes delicious english muffins. yours are so beautiful that i am inspired to make some myself.

That basket of muffins is something I would love to have on my breakfast table! Since you say you think the dough was not as loose as Chuck's, I wonder if just using a bit more water in this recipe would give you the nook-and-cranny-ness you're looking for?

OMG - I have some English Muffin forms that I bought last year in preparation to make my own. Only problem is I never made them. Thanks for the inspiration and reminder that I need to MAKE them :) :) Yours look great - I had no idea they were fried!

Your English muffins look really good - too bad they didn't impress you more. I made some a while back and was just giddy over them. I think I ate them all myself. I did prefer them fresh from the griddle though when they were fresh and still hot.

English muffins were one of my projects this winter. I tried several different recipes and finally ended up liking a King Arthur recipe I adapted to use witgh my sourdough starter. But I never did get the nooks and crannies either, even when I tried making wetter doughs and extending the rise time. I feel better that you had the same beautiful, but nookless, results

Dan Lepard has a recipe for English muffins (or 'muffins' as I call them on this side of the Atlantic...) with the addition of toasted/roasted buckwheat groats which are softened up with some boiling water and cider vinegar.

They are fab with butter, cheese etc - never tried them with jam though...

I saw you on Susan's Yeastspotting roundup and wanted to hop on over and tell you how fabulous these English muffins look! I made the English muffin loaf; I wanted English muffins but was afraid they may not have come out! Yours are perfect!

As delicious as my bread was, it didn't have those nooks and crannies either! Hmmm. Strange.
