This week’s CEiMB was Buffalo Chicken Salad with Blue Cheese Dressing and was chosen by the lovely Andrea of You Eat Now.
All sources say that this was totally delicious and wonderful. Unfortunately for me, I really hate blue cheese (Yuck - it’s moldy!) and hot foods. However, Nick and our co-blogger and good friend Geoff love both blue cheese and hot things. So I made this for them and did not have one bite of it.

I used chicken tenders here. For the rub, I mixed powdered cayenne pepper with some olive oil until I had a nice paste to rub on the chicken. I spiced up the rub with some homemade chili (a.k.a “Death") oil that Nick made last summer. I asked the boys if the chicken tasted like buffalo wings and they said “kind of, but better than buffalo wings".
For the blue cheese dressing, I pretty much followed her recipe exactly except that I added in extra blue cheese and I pureed it to get the cheesy flavor throughout the dressing. I did use non fat Greek yogurt instead of plain yogurt, so I skipped the draining part and this dressing came out wonderfully creamy.
Overall the boys really liked this a lot. It was a winner and a great pick by Andrea.
